Pondering on new ideas: Chef Scott Smith

I first had the pleasure of experiencing chef Scott Smith’s exquisite Viking inspired cuisine when he was heading up the kitchen at ‘Norn’ in Edinburgh and immediately put him up there with the better known international superstars of healthy dining such as Alain Ducasse and Wolfgang Puck. Scott is now based at his own restaurant ‘FHIOR’ in Broughton Street where the theme is similar to before – delicious local ingredients, expertly cooked and presented with warmth by knowledgable staff in a simply decorated, pared back room where the focus is less on the decor and very much dedicated to the delicious food and wine.
