In Ubud, Bali, there’s a fantastic restaurant that serves raw food and smoothies. As well as for the occasional sit-in lunch, I used it for home delivery when I was there for a month staying in a villa compound in the centre of the rice fields. Here is the recipe for a typical green smoothie from Bali Buda:

  • 2 1/4 cups water/ice
  • 8 cups loose bok choy and yu choy (coarsely chopped)
  • 1 cup Chinese celery
  • 1-2 cups bean sprouts
  • 4 tangelos
  • 2 bananas, frozen in chunks
  • 1/2 tsp stevia
  • 4 cups frozen mixed berries

NICKY SUMMER: “‘Smoothie Of The Day’ today is actually a juice… delicious super-hydrating pure watermelon juice 🍉 courtesy of MALIBU FARM at the end of the pier off Carbon Beach. Fruit juices, and a few vegetable juices such as carrot, aren’t low-cal as they’re full of fructose and there’s no fibre in them to slow down the sugar rush (which is why I tend to go for a smoothie in the morning instead). However, watermelon is amazingly refreshing and full of nutrients including:

  • Vitamin C: 21% of the Reference Daily Intake (RDI)
  • Vitamin A: 18% of the RDI
  • Potassium: 5% of the RDI
  • Magnesium: 4% of the RDI
  • Vitamins B1, B5 and B6: 3% of the RDI

Watermelon is the the fruit most often used to break a water-fast as it’s very pure and easily digestible. I serve my juice over ice with a thin slice of lime, and sometimes I’ll dilute it with fresh organic coconut water straight out of the shell…🥥 Enjoy!”

NICKY SUMMER: “I once ordered a berry smoothie at KX in London and it arrived decorated with shards of dark blue petals dotted like jewels all over the outside of the glass — kinda/sorta like this. For my recipe here (makes 2), I used a blend of almond milk, chia seeds, hemp protein powder, lemon juice, half a packet of frozen ‘fruits of the forest’/half a packet of frozen sour cherries from Waitrose…then I used the fresh white of an egg to glue the petals to the glass. Here is The Ranch Malibu’s own recipe from their mini cook book and website for a berry smoothie full of antioxidants for immunity and wellbeing”: Makes 2 (10 ounce) servings.
1 cup fresh or frozen berries (strawberries, blueberries, raspberries, blackberries, or a combination; see Note)
½ cup freshly chopped kale leaves (remove the stalks before chopping)
¼ cup chopped broccoli
½ banana
½ cup diced fresh pineapple
½ avocado, pitted and peeled
About 1 cup fresh orange juice
In a blender, place the berries, kale, broccoli, banana, pineapple, and avocado. Slowly add the orange juice to the blender carafe, ¼ cup at a time, pulsing the blend. Continue adding more juice and blend until you’ve reached the smoothie consistency you like. Serve immediately, as the nutrients in the smoothie diminish over time.
