C&B: “Claire, you have had a very busy summer; now that autumn has arrived, what role does seasonal produce play in your cake design and flavour development?”
CP: “With cakes, seasonal produce plays less of a role than in catering. However, we do look to see if we can adapt some recipes to the seasons. The dates in the sticky toffee cake are so reminiscent of dark nights and warm fires. Additionally, we switch to spiced rum in our fruit cake…”
We are fundamentally client-led in our approach, which means that our creations are primarily guided by their preferences and desires. For Autumnal and Christmas themed wedding shows or photo shoots, we may explore the incorporation of more luxurious elements such as gold leaf and accents of edible glitter, among other festive enhancements…”

C&B: “Are there any specific themes or motifs that you plan to explore in your autumn cake creations this year?”
CP: “We’ll focus more on colours than on motifs and themes. However, we have previously created autumn wedding cakes adorned with edible autumn leaves in rich shades of burnt orange and red. Additionally, we may transition to a warmer ivory fondant instead of a brighter white…”
We love photo shoots. They are a wonderful way to be creative and to work more closely with other suppliers. Typically, the stylist will have arranged the cake table prior to our arrival. When we have the opportunity to influence the visuals, we aim to reflect the colours and shapes present in the overall design. This harmonious integration enhances the aesthetic appeal of the cake and creates a cohesive event atmosphere. By aligning our designs with the stylist’s vision, we ensure that the cake not only serves as a centrepiece but also complements the surrounding decor, thereby elevating the overall experience for the guests…”

C&B: “Throughout the years, what role has client feedback played in your evolution as a luxury cake designer, and what impact has it had on Peboryon?”
CP: “Oh, feedback is probably the most important aspect. We always take note of which designs are popular and which are not during open days and shows. Our orange and cranberry biscuits even received a marriage proposal for Dan, who works with us! Peboryon is also the preferred supplier for several gorgeous hotels and venues, a relationship we hope to continue for a long time…”
