I feel incredibly lucky to be part of this industry; it’s filled with love, a huge amount of skill, and it is constantly evolving. My clients, along with the venues they choose, shape and evolve my designs. I pride myself on getting to know each of them, learning about their lives, loves, and passions. I want their cake to showcase and tell their love story. Over the years, our work has been featured in numerous online and print wedding magazines and blogs, including Vogue, Wedding Sparrow, Wedding Chicks, Love My Dress, and Rock My Wedding, to name but a few…”

C&B: “Your wedding cakes are beautiful – what originally inspired you to become a designer in this sector?”
HM: “Food has always been an important part of my life. Some of my fondest memories are of sitting around the table with my Italian ‘nonna’ and our big Italian family, having lively – and very passionate! – discussions over incredible food. As a child, my mum would create the most amazing, highly decorated birthday cakes for us. They were always beautiful and unique, and I think that was my first glimpse of how magical cakes can be. I suppose it was inevitable that this love for baking would be passed down to me. I began making cakes for my own children’s birthdays, which quickly ignited that creative spark. Every cake is a chance to push my skills and take my ability to the next level. I still get nervous starting a new design and delivering a cake – I consider each one to be a challenge because I put so much of my heart and soul into them…”

C&B: “Which factors you consider first when asked to design a cake for clients?”
HM: “Finding out what my couple envisions and expects generally dictates the cake’s size and design. The décor should showcase them as a couple and fit seamlessly with the aesthetic of their big day. I advise them not to follow trends and to step away from socials, including Pinterest, to avoid being influenced by what friends or family have had previously, and to work closely with the cake designer. We use colour samples, the venue decor, and even the couple’s outfits, to ensure the cake is a true celebration of them. Delivery day is always nerve-wracking as I’m like a cat on a hot tin roof until the cake is perfectly in place. The anticipation and excitement are electric – a very addictive feeling. Every element, angle, and flower has to be perfect before I walk away. And when I finally do, knowing I have done the best job possible, there is no better feeling…”

C&B: “How important is flavour in your cakes and, how do you incorporate it?”
HM: “Flavour is such an important part of the cake and planning process – a cake must taste as good as it looks! Our love of food, including Michelin-starred dining, has shaped and elevated our flavour combinations and my baking skills. We’re extremely passionate about the flavours we offer and the ingredients we source. Our free-range eggs come from a farm near our home, and our butter is churned in the West Country. We use fresh vanilla pods in our Signature Vanilla, homegrown thyme in herbaceous syrups, and luxury Belgian chocolate. All fillings, preserves, and syrups are homemade, including our miso caramel filling and hugely popular Champagne syrup…”

Every venue that I deliver to is stunning and unique in its own right. The larger luxury hotels and country houses are definitely a highlight; I adore the ornate décor and architecture. Brympton House, The Four Seasons Tower Bridge, The Dorchester (above), and Grittleton House are just a few of my favourites. I also love marquee weddings on family estates; they are so unique, and the couple can really make it their own…”

C&B: “Out of all the styles you produce, which are your most popular?”
HM: “I incorporate a great deal of sugar floral work into my designs and absolutely adore creating them. My architectural designs with differing-depth tiers are also popular, but by far the most requested are the intricate, baroque, detailed designs. Personally, I’m drawn to anything that stands out and is unique; I love big, bold, beautiful, show-stopping designs!”
