C&B: “Haley, each of your cakes is beautifully decorated and entirely unique; what’s your design philosophy when creating custom cakes for special occasions?”
HE: “My design philosophy centres around elegance, intention, and individuality. I believe that a wedding cake should feel like a natural extension of the day not just visually, but emotionally too. It’s not about following trends or replicating past designs; it’s about capturing the essence of each couple’s story and translating it into something both artful and deeply personal. Every cake I create is thoughtfully designed with balance, proportion, and refinement in mind. I pay close attention to the details, those subtle touches that bring a sense of quiet luxury and sophistication. Whether it’s a hand-crafted sugar flower echoing the bridal bouquet or a silhouette that mirrors the flow of the dress, I want each element to feel considered and cohesive. Ultimately, it’s about creating a lasting impression something that not only looks exquisite, but feels entirely ‘them’…”

Every design is created from scratch with the couple in mind from structure and silhouette to the sugar flowers, which are each individually handcrafted to mirror nature as closely as possible. I don’t work from templates or trends. Instead, each cake is a one-of-a-kind creation that reflects the tone and style of the day…”

C&B: “Talking of capturing the essence of the couple, how do you approach the cake consultation process with clients to ensure their vision is effectively captured?”
HE: “The consultation process is one of my favourite parts of the journey, it’s where ideas begin to take shape and the cake starts to feel truly personal. I approach each consultation with a deep sense of curiosity and care. It’s not just about flavour or aesthetics, it’s about understanding the atmosphere of the day, the couple’s style, and the little details that matter most to them. I take time to listen, ask the right questions, and guide the conversation with experience and intuition. Whether it’s inspired by the movement of the dress, the venue’s architecture, or the seasonal flowers in the bouquet, I look for subtle threads we can weave into the design so the cake feels beautifully connected to the celebration. The experience itself is intentionally warm and thoughtful. Something couples often tell me was one of the most enjoyable moments in their planning. That means the world to me. My goal is for them to walk away feeling seen, inspired, and utterly confident that their cake will be everything they hoped for and more…”
C&B: “Can you elaborate on the types of ingredients you use to ensure the highest quality in your cakes?”
HE: “Quality begins with the ingredients, and for me, there’s absolutely no compromise. Every cake is baked from scratch using carefully developed recipes and thoughtfully selected ingredients that deliver both depth of flavour and elegance of finish. Free-range eggs, British dairy, flour sourced from the local flour mill, Madagascan vanilla, and Belgian couverture chocolate are staples in my kitchen. Where possible, I take a seasonal, locally sourced approach. Beyond flavour, I’m equally mindful of structure and consistency. My cakes are designed not only to taste exquisite but to perform beautifully under sugar work, multi-tiered designs, and travel. It’s about creating something that is as considered as the rest of your day, something that leaves a lasting impression, right to the very last bite…”


You may find fruit from my own garden woven into the flavour of my cakes, or berries freshly picked from a nearby farm. There’s something so rewarding about knowing exactly where your ingredients have come from, it adds a layer of authenticity and care that you simply can’t replicate…”

C&B: “What are some of your most popular cake flavours and fillings, and do you offer seasonal or unique options?”
HE: “Flavour is at the heart of everything I do, and my menu is designed to offer both classic indulgence and unexpected delight. Some of my most loved combinations include Peach Indulgence – a delicate blend of peach and raspberry inspired by a traditional summer pudding; Pistachio, Rose & Raspberry, which brings a beautiful depth and floral note; and White Chocolate & Passionfruit, a vibrant, refreshing favourite that’s always in demand. Seasonality plays a significant role in how I guide couples through their choices. I take time to help them select flavours that feel right for the time of year they’re marrying light, bright notes in summer, richer, spiced tones in the colder months. Many of the fruits I use are home-grown or locally picked, adding a meaningful, personal touch to each tier. I also welcome bespoke requests. One of the most memorable commissions was a parsnip and maple cake. A flavour that held special significance for the couple and turned out to be a beautifully subtle, earthy creation. For me, the joy lies in making sure each cake tastes just as extraordinary as it looks, with every bite telling part of the story…”
C&B: “Parsnip and maple – that is certainly unique! How do you maintain the integrity and freshness of your cakes during the special occasion – we’re aware that the heat of the summer months can present challenges…”
HE: “Maintaining the integrity and freshness of each cake is something I take incredibly seriously and it’s all part of the service my clients trust me for. Every cake is baked to order, never frozen, and layered with freshly prepared fillings to ensure the flavour and texture are at their absolute best on the day. From there, it’s all about timing, precision, and care. I personally deliver and set up each wedding cake, often working closely with the planner and venue team to ensure everything is perfectly in place. The cake is transported carefully to maintain its stability, and I often complete final details on-site to ensure it looks flawless and hadn’t been compromised by travel or other conditions. It’s not just about presentation it’s about preserving that first bite moment. Whether the cake is served immediately or later in the evening, I want it to be as fresh, delicious, and beautifully structured as it was the moment it left my hands…”
C&B:”How far in advance do clients typically need to place their orders for a custom cake, and what is your cancellation policy?”
HE: “I always recommend that couples secure their wedding cake order at least 12 months in advance, especially for popular dates during peak season. My diary tends to fill up quickly, and reserving early ensures plenty of time for a truly bespoke design process. That said, I’ve seen an increasing number of last-minute enquiries recently, often because the cake is one of the final details to be considered which, in truth, it shouldn’t be – the cake is a centrepiece of the reception and is photographed, admired, and devoured with your guests – so it deserves to be planned with as much thought and care as every other element of the day!”
C&B: “Do you offer cake tastings, and if so, what is typically included in that experience?”
HE: “Yes, I do offer cake tastings, and they’re a key part of the bespoke experience. Couples can expect a beautifully presented selection of flavours from my menu, curated to reflect both popular choices and seasonal pairings. It’s an opportunity not only to taste the quality of the ingredients and the balance of flavours, but also to explore what might feel right for the time of year and their individual preferences. Tastings are either held in person or offered as beautifully packaged postal boxes, depending on location and availability. Whether in person or at home, I encourage couples to take their time, savour each flavour, and consider how their choices reflect the tone of the day. The tasting experience naturally leads into the consultation and design stage, where we begin to bring their vision to life. It’s a moment that many of my couples tell me was one of the most enjoyable parts of their planning and I think that speaks volumes…”
